There are so many versions of Apple Cake out there. I am not fond of Apple Cake or Pie at least not mushy soggy ones.
3/4 Cup of All purpose flour
3/4 Cup of fine baking sugar
3/4 teaspoon baking powder
2 Eggs room temperature
1/8 teaspoon kosher salt
1 Tablespoon Vanilla Paste
1 stick melted butter and cooled
1/2 teaspoon cinnamon
3 Tablespoons heavy cream
2 Honey Crisp Apples peeled/cored sliced thin on mandolin soak in lemon water
Whisk the dry ingredients together
Whisk the eggs and add vanilla, cinnamon and cream and mix well into flour mixture add the butter mix well,
add the apples incorporate well. Put in a 6 or 8 inch springform pan. (butter and flour your pan)
bake at 350 for 45-55 minutes
Cool completely can be served warm with powdered sugar or whipped cream.
Can be reheated in mico for 20-22 seconds.
